Cheese Risotto

Ingredients
- 1 tbsp extra virgin olive oil
- 1 cup white onions (chopped)
- 6 cups chicken stock
- 2 tsps garlic (chopped)
- 1 lb Arborio rice
- 1 tbsp butter
- 1/4 cup heavy cream
- 1/4 cup Romano cheese (grated )
- 1/4 cup Asiago cheese (grated )
- 1/4 cup Parmigiano-Reggiano cheese (grated )
- 2 tbsps chives (chopped)
- salt
- pepper
Directions
- In a large pan, head the olive oil on medium heat.
- Add the onion and season with salt and pepper. Saute until the onions are soft, about 3 minutes.
- Add the chicken stock and garlic, and bring the liquid to a boil.
- Reduce to a simmer and cook for 6 minutes.
- Add the rice and simmer for 18 minutes, stirring frequently.
- Add the butter, cream, cheese, and chives.
- Simmer for 2 more minutes.
