Instant Pot Chicken and Rice

  • 1 tbsp olive oil
  • 1/2 yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tbsp cajun seasoning
  • 1 cup white rice
  • salt
  • pepper
  • 1 1/4 cups chicken broth
  • 2 carrots (chopped)
  • 1 red bell pepper (chopped)
  • 3 boneless skinless chicken breasts

  • Turn on the Instant Pot’s “saute” function and saute the onions in the oil until soft, about 4 minutes.
  • Add in garlic and spices and cook for 1 more minute.
  • Add the remaining ingredients.
  • Cook on high for 8 minutes, then let the Instant Pot decompress naturally for 10 minutes.
