Instant Pot Chicken and Rice

Ingredients
- 1 tbsp olive oil
- 1/2 yellow onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tbsp cajun seasoning
- 1 cup white rice
- salt
- pepper
- 1 and 1/4 cups chicken broth
- 2 carrots chopped
- 1 red bell pepper chopped
- 3 boneless skinless chicken breasts
Directions
- Turn on the Instant Pot’s “saute” function and saute the onions in the oil until soft, about 4 minutes.
- Add in garlic and spices and cook for 1 more minute.
- Add the remaining ingredients.
- Cook on high for 8 minutes, then let the Instant Pot decompress naturally for 10 minutes.
