Instant Pot Chicken Stew

Ingredients
- 4 tbsp unsalted butter
- 2 yellow onion, diced
- 4 carrots, chopped
- 2 stalk celery, chopped
- 1 pinch salt
- 1 tsp pepper
- 4 cloves minced garlic
- 2.5 lbs boneless skinless chicken breasts, cubed
- 6 red potatoes
- 4 cups chicken broth
- 1 tsp italian seasoning
- 4 tbsp cornstarch
- 1 cup water
Directions
- Heat the Instant Pot with the saute function.
- Add the butter, onions, carrots, celery, salt, and pepper to the Instant Pot. Saute for 5 minutes.
- Add garlic to the Instant Pot. Saute for 30 more seconds.
- Turn off Saute function and add chicken, potatoes, chicken broth, and italian seasoning to the Instant Pot and stir.
- Cook on high pressure for 14 minutes, allow 10 minutes for natural release, and then vent the remaining pressure manually.
- In a bowl, combine cornstarch and water until dissolved.
- Heat the Instant Pot with the saute function and stir in the cornstarch mixture. Cook for 5 minutes.
