Instant Pot Chicken Stew

  • 4 tbsp unsalted butter
  • 2 yellow onion, diced
  • 4 carrots, chopped
  • 2 stalk celery, chopped
  • 1 pinch salt
  • 1 tsp pepper
  • 4 cloves minced garlic
  • 2.5 lbs boneless skinless chicken breasts, cubed
  • 6 red potatoes
  • 4 cups chicken broth
  • 1 tsp italian seasoning
  • 4 tbsp cornstarch
  • 1 cup water

  • Heat the Instant Pot with the saute function.
  • Add the butter, onions, carrots, celery, salt, and pepper to the Instant Pot. Saute for 5 minutes.
  • Add garlic to the Instant Pot. Saute for 30 more seconds.
  • Turn off Saute function and add chicken, potatoes, chicken broth, and italian seasoning to the Instant Pot and stir.
  • Cook on high pressure for 14 minutes, allow 10 minutes for natural release, and then vent the remaining pressure manually.
  • In a bowl, combine cornstarch and water until dissolved.
  • Heat the Instant Pot with the saute function and stir in the cornstarch mixture. Cook for 5 minutes.
