Instant Pot Chili

Ingredients
- 2 tsps olive oil
- 2 lbs 90% lean ground beef
- 1 yellow onion, finely diced
- 1 and 1/2 tsps garlic, minced
- 28 oz can diced tomatoes (not drained)
- 3 8 oz cans tomato sauce
- 3/4 cup beef broth
- 2 tbsps chili powder
- 2 tsps ground cumin
- 2 tsps smoked paprika
- 2 tbsps cajun seasoning
- 1 tsp granulated sugar
- kosher salt
- pepper
- 15 oz can kidney beans, drained and rinsed
- 15 oz can pinto beans, drained and rinsed
- other toppings, like cheese or green onions
Directions
- Heat the Instant Pot with the saute function.
- Add the olive oil and the meat, and cook until browned, breaking up the beef as you stir.
- Add the onion and cook for 3 more minutes.
- Add the remaining ingredients to the pot.
- Turn on the Chili/Beans setting on the Instant Pot and cook for 20 minutes. Release the pressure manually.
- Serve with desired toppings.
