Instant Pot Chili

  • 2 tsps olive oil
  • 2 lbs 90% lean ground beef
  • 1 yellow onion, finely diced
  • 1 and 1/2 tsps garlic, minced
  • 28 oz can diced tomatoes (not drained)
  • 3 8 oz cans tomato sauce
  • 3/4 cup beef broth
  • 2 tbsps chili powder
  • 2 tsps ground cumin
  • 2 tsps smoked paprika
  • 2 tbsps cajun seasoning
  • 1 tsp granulated sugar
  • kosher salt
  • pepper
  • 15 oz can kidney beans, drained and rinsed
  • 15 oz can pinto beans, drained and rinsed
  • other toppings, like cheese or green onions

  • Heat the Instant Pot with the saute function.
  • Add the olive oil and the meat, and cook until browned, breaking up the beef as you stir.
  • Add the onion and cook for 3 more minutes.
  • Add the remaining ingredients to the pot.
  • Turn on the Chili/Beans setting on the Instant Pot and cook for 20 minutes. Release the pressure manually.
  • Serve with desired toppings.
