Cookies

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1 teaspoon maple extract
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract

Maple Icing

  • 1 cup confectioners’ sugar (powdered sugar), sifted
  • 1/4 cup pure maple syrup

  • Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
  • In a large bowl, sift together flour, baking powder, and salt. Set aside.
  • In another large bowl, cream butter and brown sugar until light and fluffy.
  • Beat in egg, maple extract, vanilla extract, and almond extract until combined.
  • Add dry ingredients 1 cup at a time, beating on medium speed until soft dough forms.
  • Roll dough on lightly floured surface to 1/4-inch thick. Cut with cookie cutters.
  • Place cookies on prepared baking sheets, leaving 1 inch between each.
  • Bake 8 minutes until set but edges aren’t browned. Cool on sheet 5-10 minutes, then transfer to wire racks.
  • For icing: Whisk sifted powdered sugar and maple syrup until smooth and tan-colored.
  • Spread icing on cooled cookies with small spatula. Let set completely before serving.
