Rabbit Chicken

  • 8 chicken thighs
  • 3 green bell peppers
  • 3 cloves garlic
  • 1 bunch parsley
  • 1/2 cup flour
  • 1 cup chicken stock

  • Roughly chop parsley and peppers.
  • In large skillet, heat olive oil over medium-high heat.
  • Roll pieces of chicken in flour, add salt and pepper to each piece.
  • Add chicken to skillet and brown on both sides. Remove to paper towel when golden.
  • Add more olive oil to pan and then cook peppers for a minute.
  • Add parsley, grated garlic, salt, pepper, and chicken stock.
  • When liquid comes to a boil transfer the chicken back to the pane.
  • Cover the pan and simmer for 25-30 minutes, until chicken is done, stirring occasionally.
