Rabbit Chicken

Ingredients
- 8 chicken thighs
- 3 green bell peppers
- 3 cloves garlic
- 1 bunch parsley
- 1/2 cup flour
- 1 cup chicken stock
Directions
- Roughly chop parsley and peppers.
- In large skillet, heat olive oil over medium-high heat.
- Roll pieces of chicken in flour, add salt and pepper to each piece.
- Add chicken to skillet and brown on both sides. Remove to paper towel when golden.
- Add more olive oil to pan and then cook peppers for a minute.
- Add parsley, grated garlic, salt, pepper, and chicken stock.
- When liquid comes to a boil transfer the chicken back to the pane.
- Cover the pan and simmer for 25-30 minutes, until chicken is done, stirring occasionally.
