Roasted Sweet Potato Wedges
- 2 lbs sweet potatoes (scrubbed and cut into wedges)
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh rosemary (chopped, or 1/2 tsp dried)
- 1/2 tsp garlic powder (optional)
Directions
- Preheat oven to 425°F.
- Cut sweet potatoes into wedges (about 8 wedges per potato).
- In a large bowl, toss wedges with olive oil, salt, pepper, rosemary, and garlic powder until evenly coated.
- Arrange wedges in a single layer on a large baking sheet, cut side down.
- Roast for 15 minutes, then flip wedges over.
- Continue roasting for 10-15 minutes more until tender inside and crispy outside.
- Serve immediately while hot and crispy.
