Roasted Sweet Potato Wedges

  • 2 lbs sweet potatoes (scrubbed and cut into wedges)
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh rosemary (chopped, or 1/2 tsp dried)
  • 1/2 tsp garlic powder (optional)

  • Preheat oven to 425°F.
  • Cut sweet potatoes into wedges (about 8 wedges per potato).
  • In a large bowl, toss wedges with olive oil, salt, pepper, rosemary, and garlic powder until evenly coated.
  • Arrange wedges in a single layer on a large baking sheet, cut side down.
  • Roast for 15 minutes, then flip wedges over.
  • Continue roasting for 10-15 minutes more until tender inside and crispy outside.
  • Serve immediately while hot and crispy.
