Romesco Sauce

Ingredients
- 1 head garlic
- 1/2 cup raw almonds
- 1 cup baguette, cut into cubes
- 2 roma tomatoes
- 1 16oz jar roasted red peppers
- 2 tbsps parsley, chopped
- 1/4 cup extra virgin ollive oil
- 2 tbsps red wine vinegar
- 1 tsp smoked paprika
- 1 pinch cayenne
- salt
- pepper
Directions
- Preheat oven to 425.
- Cut 1/4 inch off the top of the whole garlic head. Place it in aluminum foil and drizzle olive oil, salt, and pepper. Fold the foil up and close tightly.
- Place foil on baking sheet and bake for 30 minutes.
- Squeeze the roasted garlic out of the head and into a food processor.
- Combine all other ingredients in food processor.
