Romesco Sauce

  • 1 head garlic
  • 1/2 cup raw almonds
  • 1 cup baguette, cut into cubes
  • 2 roma tomatoes
  • 1 16oz jar roasted red peppers
  • 2 tbsps parsley, chopped
  • 1/4 cup extra virgin ollive oil
  • 2 tbsps red wine vinegar
  • 1 tsp smoked paprika
  • 1 pinch cayenne
  • salt
  • pepper

  • Preheat oven to 425.
  • Cut 1/4 inch off the top of the whole garlic head. Place it in aluminum foil and drizzle olive oil, salt, and pepper. Fold the foil up and close tightly.
  • Place foil on baking sheet and bake for 30 minutes.
  • Squeeze the roasted garlic out of the head and into a food processor.
  • Combine all other ingredients in food processor.
