Shakshuka

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic
- 2 tsps paprika
- 1 tsp cumin
- 1/4 tsp chili powder
- 28 ounce can whole peeled tomatoes
- 6 eggs
- 1 bunch cilantro, chopped
- 1 bunch parsley, chopped
- salt
- pepper
Directions
- Heat olive oil in saute pan on medium heat.
- Add bell pepper and onion and cook for 5 minutes.
- Add garlic and spices and cook for 1 minute.
- Pour can of tomatoes into pan and break down tomatoes.
- Add salt and pepper.
- Bring contents of pan to a simmer.
- Make small holes in the sauce and crack eggs into each hole.
- Cover pan and cook for 5-8 minutes, or until eggs are done.
- Top with cilantro and parsley.
