  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic
  • 2 tsps paprika
  • 1 tsp cumin
  • 1/4 tsp chili powder
  • 28 ounce can whole peeled tomatoes
  • 6 eggs
  • 1 bunch cilantro, chopped
  • 1 bunch parsley, chopped
  • salt
  • pepper

  • Heat olive oil in saute pan on medium heat.
  • Add bell pepper and onion and cook for 5 minutes.
  • Add garlic and spices and cook for 1 minute.
  • Pour can of tomatoes into pan and break down tomatoes.
  • Add salt and pepper.
  • Bring contents of pan to a simmer.
  • Make small holes in the sauce and crack eggs into each hole.
  • Cover pan and cook for 5-8 minutes, or until eggs are done.
  • Top with cilantro and parsley.
