Stuffed Peppers

  • 4 large green bell peppers
  • 15 oz tomato sauce
  • 1/2 lb ground beef
  • 1/3 cup chopped white onion
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp garlic powder
  • 1/3 cup dry white rice

  • Preheat oven to 350.
  • Cook the white rice.
  • Cut off the tops of the peppers and remove the seeds.
  • Place the peppers in a large saucepan and cover with water. Bring to a simmer and cook for 3 minutes.
  • Drain the peppers, rinse them with cool water, and set them aside.
  • In a skillet, heat the ground beef and onion and cook until browned. Drain the remaining liquid.
  • Combine the cooked ground beef and onion with the salt, pepper, rice, garlic powder, and 8oz of the tomato sauce.
  • Spoon the mixture into the peppers, then top with the remaining tomato sauce.
  • Bake in an ungreased dish for 25-30 minutes.
