Sweet Potato Egg Casserole

Ingredients
- 2 tablespoons oil
- 1/2 large yellow onion, chopped
- 1 green bell pepper, chopped
- 5 cups cubed sweet potatoes
- 3 garlic cloves, minced
- 1 pound turkey sausage
- 10 eggs
- 1/2 cup milk (plant-based milk can be substituted)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated mozzarella cheese
Directions
- Preheat oven to 350°F and grease a 9×13-inch casserole dish.
- Heat oil in a Dutch oven over medium-high heat. Add onion, bell pepper, and sweet potato. Cook 8-9 minutes until vegetables soften, adding garlic in the last minute.
- Transfer vegetables to the casserole dish and spread evenly.
- In the same pot, cook turkey sausage until done, breaking into small pieces. Add to casserole dish with vegetables.
- In a bowl, whisk together eggs, milk, thyme, salt, pepper, and cheese.
- Pour egg mixture over vegetables and sausage. Stir gently to combine.
- Bake 40-45 minutes until center is firm. Cover with foil if top browns too quickly.
- Cool 15 minutes before serving.
